Winemaking Process

From the harvest through to the perfect blend, every step in the winemaking process is performed separately for each grape variety.

After hand sorting and destemming , the grapes are cold soaked in tanks for three days. Alcoholic fermentation takes place for two weeks, after which the grapes undergoes an additional 15 days of skin contact before pressing. After a brief period of stabilization, each wine is transferred to predominately new French oak barrels to age for 15 months. The final blend is then selected from the various varieties and barrels and the wine is bottled after natural stabilization with minimal clarification and filtering. After bottling, the wine continues to age for at least one more year in our cellars.

Tasting Notes

Our premium vineyards produce lusciously ripe grapes that are concentrated and intensely balanced with some fresh acidity. This wine has a glossy scarlet-black color, with a prominent aroma of black cherry and wild blackberry. Lightly smoky, this wine entices with vanilla and a delicate spice on the palate, finishing with intense fruit flavors and a note of bittersweet chocolate.

The Sapphire is a full-bodied, rich, balanced and concentrated wine with a long, rich and generous finish. It is drinkable immediately, but will continue to develop in proper storage for five to eight years after its vintage date.
